Preheat your oven to 425°F (220°C).

In a large skillet, melt the butter over medium heat. Add the diced onion and minced garlic, sautéing until soft and translucent.

Sprinkle in the Cajun seasoning and stir for about 1 minute until fragrant.

Add the flour and mix well for about 2 minutes to form a roux.

Gradually whisk in the seafood broth and bring the mixture to a simmer until it thickens, about 5 minutes.

Stir in the heavy cream and Worcestershire sauce, then add the seafood and frozen mixed vegetables. Cook gently until the seafood is just cooked through, about 3-4 minutes. Season with salt and pepper to taste.

Remove from heat and allow the filling to cool slightly.

Roll out one pie crust and lay it in a pie dish. Pour the seafood filling into the crust.

Cover with the second pie crust, sealing the edges by crimping. Cut slits in the top crust to allow steam to escape.

Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown.

Allow the pot pie to cool slightly before serving. Garnish with chopped parsley.

                        Prep Time: 20 minutes | Total Time: 1 hour | Servings: 6

                          - Presentation Tips: Serve the pot pie hot, with a light salad on the side for added freshness. You can also garnish with more parsley for a pop of color.
