Caprese sandwich

2 slices of fresh ciabatta bread

1 medium ripe tomato, sliced

125g fresh mozzarella, sliced

1 handful of fresh basil leaves

2 tablespoons balsamic glaze

1 tablespoon extra virgin olive oil

Salt and pepper to taste

Optional: 1 tablespoon pesto for extra flavor

Begin by preheating a grill pan or sandwich press over medium heat.

    Slice the ciabatta bread into two even halves. If desired, lightly brush the cut sides with olive oil for extra flavor.

      Start layering your sandwich: place a few slices of tomato on the bottom half of the bread.

        Add the mozzarella slices on top of the tomato, ensuring an even coverage.

          Sprinkle a handful of fresh basil leaves over the cheese.

            Drizzle balsamic glaze over the basil and season with salt and pepper to taste. If you’re using pesto, spread it on the top half of the bread now.

              Place the top half of the ciabatta on the sandwich and secure it gently.

                Place the sandwich in the grill pan or sandwich press. Grill for about 4-5 minutes, or until the bread is golden brown and the mozzarella has slightly melted. If using a grill pan, press down with a spatula for even grilling.

                  Once grilled, carefully remove the sandwich from the heat and let it cool for a minute before slicing it in half.
