8 slices of thick sourdough bread

200g cooked shrimp, peeled and deveined

4 cloves garlic, minced

150g cream cheese, softened

100g shredded mozzarella cheese

50g grated Parmesan cheese

4 tablespoons unsalted butter, softened

1 teaspoon dried parsley

Salt and pepper to taste

Optional: red pepper flakes for extra heat

In a mixing bowl, combine the softened cream cheese, minced garlic, cooked shrimp, mozzarella cheese, Parmesan cheese, dried parsley, salt, and pepper. Mix thoroughly until all ingredients are well incorporated.

    Spread a thick layer of the cheese and shrimp mixture on one side of 4 slices of sourdough bread. Top with the remaining 4 slices of bread, creating sandwiches.

      In a frying pan, heat 2 tablespoons of softened butter over medium heat. Once melted, place two of the sandwiches in the pan. Grill for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.

        While the first two sandwiches are grilling, repeat the process with the remaining butter and sandwiches.

          Once all sandwiches are golden and crispy, remove from the pan and let cool for a minute. Cut each sandwich in half diagonally for presentation.
