1 large round loaf of Sicilian bread

1 cup green olives, pitted and finely chopped

1 cup black olives, pitted and finely chopped

1/2 cup roasted red peppers, sliced

1/2 cup artichoke hearts, chopped

1/2 cup fresh mozzarella cheese, sliced

1/2 cup provolone cheese, sliced

1/4 cup fresh basil leaves

1/4 cup olive oil

1 tablespoon red wine vinegar (optional, can be omitted)

Salt and pepper to taste

Prepare the Olive Salad: In a medium bowl, combine the green olives, black olives, roasted red peppers, artichoke hearts, and chopped basil. Drizzle with olive oil and red wine vinegar (if using). Stir well and season with salt and pepper. Set aside for at least 30 minutes to allow the flavors to meld.

    Prepare the Bread: Cut the Sicilian bread in half horizontally. Hollow out some of the soft bread from the inside to create space for the filling, being careful not to break the crust.

      Layer the Ingredients: Begin by placing a layer of provolone cheese on the bottom half of the bread. Add a generous layer of the prepared olive salad, ensuring it's evenly distributed. Then, add the fresh mozzarella slices on top of the olive salad.

        Top it Off: Place a layer of sliced roasted red peppers over the mozzarella and finish with fresh basil leaves. Finally, cover with the top half of the bread.

          Press the Sandwich: Wrap the completed sandwich tightly in plastic wrap. Place a heavy object (like a cutting board or a heavy skillet) on top to press down the sandwich. Let it sit for at least 1 hour at room temperature, or in the refrigerator for up to 24 hours for enhanced flavor.

            Slice and Serve: Once ready to serve, unwrap the sandwich and slice it into wedges.
