4 medium russet potatoes, peeled

1 small onion, finely grated

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper to taste

3 tablespoons vegetable oil or clarified butter

Fresh chives, finely chopped (for garnish)

Start by grating the peeled russet potatoes using a box grater or food processor. Place the grated potatoes in a large bowl filled with cold water to remove excess starch and prevent browning. Let them soak for about 10 minutes.

    After soaking, drain the potatoes and rinse them under cold water. Press the potatoes in a clean kitchen towel or cheesecloth to remove as much moisture as possible—this step is crucial for achieving crispiness.

      In a large bowl, combine the grated potatoes, finely grated onion, garlic powder, onion powder, paprika, salt, and pepper. Mix well until all ingredients are integrated.

        Heat 1 tablespoon of vegetable oil or clarified butter in a large non-stick skillet over medium-high heat.

          Once the oil is hot, add half of the potato mixture to the skillet and press it down firmly into an even layer. Cook for about 5-7 minutes without disturbing it, until the bottom is golden brown and crispy.

            Carefully flip the hash browns using a large spatula or by inverting onto a plate and sliding back into the skillet. Add another tablespoon of oil if needed. Cook the other side for another 5-7 minutes, until it is also golden brown and crispy.

              Once both sides are crispy, transfer the hash browns to a paper towel-lined plate to absorb excess oil. Repeat the cooking process with the remaining potato mixture.

                Garnish the crispy hash browns with freshly chopped chives before serving.
