6 pork sausages (choose flavored ones like apple & sage for a twist)

800g potatoes, peeled and diced

100ml milk

50g butter

Salt and pepper to taste

1 onion, sliced

2 tablespoons olive oil

300ml chicken or vegetable broth

1 tablespoon Worcestershire sauce (optional for flavor)

Fresh parsley, chopped for garnish

Start by boiling the diced potatoes in a large pot of salted water over medium heat. Cook until tender, about 15-20 minutes.

    While the potatoes are cooking, heat the olive oil in a large skillet over medium-high heat. Add the sausages and cook them for about 15 minutes, turning occasionally until they are browned and cooked through.

      Remove the sausages from the skillet and set them aside. In the same skillet, add the sliced onion and cook until softened and caramelized, about 8-10 minutes.

        Pour the broth and Worcestershire sauce into the skillet with the onions, stirring to combine, and let it simmer for about 5 minutes. This creates a tasty onion gravy.

          Once the potatoes are cooked, drain them and return them to the pot. Add the milk, butter, salt, and pepper, and mash the potatoes until smooth and creamy.

            Serve the sausages on a bed of mashed potatoes, drizzling the onion gravy generously over the top. Garnish with chopped parsley.
