2 medium apples (Granny Smith or Honeycrisp), peeled and diced

1 cup all-purpose flour

1/4 cup granulated sugar

2 teaspoons baking powder

1/2 teaspoon cinnamon

Pinch of salt

1 large egg

1/2 cup milk

1 teaspoon vanilla extract

Oil for frying (vegetable or canola)

For the Glaze:

1 cup powdered sugar

2 tablespoons milk

1/2 teaspoon vanilla extract

In a medium bowl, combine the diced apples with a sprinkle of cinnamon and set aside to allow the flavors to meld.

    In a separate mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, ground cinnamon, and a pinch of salt.

      In another bowl, beat the egg and add the milk and vanilla extract. Mix until well combined.

        Gradually add the wet mixture to the dry ingredients, stirring gently until just combined. Do not overmix; it’s okay if there are a few lumps.

          Carefully fold in the diced apples into the batter, ensuring they are evenly distributed.

            Heat about 2 inches of oil in a deep saucepan or fryer to 180°C (350°F).

              Using a small ice cream scoop or a tablespoon, drop spoonfuls of the batter into the hot oil. Fry in batches to avoid overcrowding.

                Fry for 2-3 minutes on each side or until golden brown and cooked through. Remove the fritters and place them on a paper towel-lined plate to drain excess oil.

                  For the glaze, whisk together the powdered sugar, milk, and vanilla extract in a small bowl until smooth. Adjust the consistency with more milk if necessary.

                    Once the fritters have cooled slightly, dip the tops into the glaze or drizzle it generously over them.
