2 large yellow onions, thinly sliced

2 tablespoons unsalted butter

1 tablespoon olive oil

1 teaspoon sugar

Salt and pepper to taste

4 slices of thick sourdough bread

1 cup shredded Gruyère cheese

1 cup shredded mozzarella cheese

1 tablespoon fresh thyme leaves (optional)

2 tablespoons balsamic vinegar (optional for added depth)

Caramelize the Onions: In a large skillet, heat the butter and olive oil over medium heat. Add the sliced onions and sprinkle with salt, pepper, and sugar. Cook for about 20-25 minutes, stirring frequently, until the onions are deeply caramelized and golden brown. If you are using balsamic vinegar, stir it in during the last five minutes of cooking for an extra flavor boost.

    Prepare the Bread: While the onions are cooking, spread butter on one side of each slice of sourdough bread.

      Assemble the Sandwich: Once the onions are caramelized, it’s time to build the sandwich. On the unbuttered side of two slices of bread, layer half of the Gruyère cheese, followed by half of the caramelized onions, and then sprinkle some fresh thyme leaves if using. Add half of the mozzarella cheese on top. Place the remaining slices of bread on top, buttered side facing out.
