Preparation: Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and set aside.

Base Layer: Pour the melted butter into the prepared cake pan, spreading it evenly over the bottom. Sprinkle the brown sugar on top of the butter, ensuring an even coating.

Pineapple Layer: Place the drained pineapple slices on the brown sugar layer, making sure to arrange them in a circular pattern. Place a maraschino cherry in the center of each pineapple ring and any leftover cherries among the slices.

Cake Batter: In a large mixing bowl, whisk together the flour, granulated sugar, salt, and baking powder. In another bowl, combine the milk (or reserved pineapple juice), vanilla extract, and eggs, whisking until well mixed.

Combine: Gradually add the wet ingredients to the dry ingredients, mixing until just combined—be sure not to overmix.

Bake: Pour the batter over the pineapple and cherries in the cake pan, smoothing it out evenly. Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.

Cool and Flip: Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. Carefully invert the cake onto a serving plate while it is still warm, allowing the pineapple and cherries to be on top.

Serve: Allow the cake to cool completely before slicing. It can be enjoyed warm or at room temperature, paired with whipped cream or vanilla ice cream if desired.
