Zutaten
  

4 cups water

4 tablespoons green tea leaves (Kashmiri or any good quality green tea)

½ teaspoon baking soda

2 cups whole milk

2 tablespoons sugar (or to taste)

½ teaspoon cardamom powder

Chopped pistachios and almonds for garnishing

A few strands of saffron (optional)

In a deep saucepan, bring 4 cups of water to a rolling boil.

    Once the water is boiling, add the green tea leaves and baking soda. The baking soda is essential as it helps release the deep color from the tea leaves.

      Allow the mixture to simmer on low heat for about 10–15 minutes, stirring occasionally. The color should start to change to a rich reddish-brown.

        When the tea has reduced to about half, use a whisk or a ladle to vigorously whisk the mixture for about 5 minutes until it creates a frothy layer on the surface. This aeration is crucial as it helps develop the pink color.

          Gradually pour in the whole milk while continuing to whisk. The tea should now turn a lovely pink hue.

            Add sugar and cardamom powder, stirring well until the sugar is fully dissolved.

              Let the chai simmer for an additional 5 minutes on low heat. If using saffron, add it in this step for enhanced flavor.

                Remove from heat, strain the chai into cups, and garnish with chopped pistachios and almonds.
