2 packets of instant ramen noodles (discard the seasoning packet)

1 cup broccoli florets

1 bell pepper, sliced (any color)

1 carrot, julienned

1 cup snap peas

2 green onions, chopped

2 cloves garlic, minced

1 tablespoon fresh ginger, minced

3 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon sesame oil

1 tablespoon vegetable oil

1 teaspoon chili paste (optional, adjust to taste)

Salt and pepper to taste

Sesame seeds (for garnish)

Begin by cooking the ramen noodles according to the package instructions but reduce the cooking time by 1 minute to keep them slightly firm. Drain and set aside.

    In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the minced garlic and ginger, sautéing for about 30 seconds until fragrant.

      Add the broccoli florets, bell pepper, carrot, and snap peas to the skillet. Stir-fry the vegetables for about 3-5 minutes until they are crisp-tender.

        Push the vegetables to one side of the skillet, then add the cooked ramen noodles to the other side.

          Drizzle the soy sauce, sesame oil, and chili paste over the noodles and mix everything together. Stir-fry for an additional 2-3 minutes, allowing the noodles to soak up the flavors.

            Add the chopped green onions and toss everything together. Season with salt and pepper to taste, adjusting the flavors as desired.

              Remove from heat and let it sit for a minute to cool slightly.

                - Presentation Tips: Serve the stir-fry in a large bowl, garnishing with sesame seeds and additional green onions on top. Optionally, you can drizzle a little more sesame oil for extra flavor.
