2 cups sushi rice

1/4 cup rice vinegar

2 tablespoons sugar

1 teaspoon salt

1 pound fresh sushi-grade tuna, diced

2 tablespoons mayonnaise (preferably Japanese mayo)

1 tablespoon Sriracha (adjust to taste)

1 avocado, sliced

1/4 cup green onions, thinly sliced

1 tablespoon sesame oil

1/4 cup panko breadcrumbs

Soy sauce, for drizzling

Wasabi and pickled ginger, for serving (optional)

Begin by rinsing the sushi rice under cold water until the water runs clear. This removes excess starch for perfectly sticky rice.

    Cook the rice according to package instructions, allowing it to cool once done. Transfer to a bowl.

      In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Pour this mixture over the cooled rice and gently fold it in, being careful not to mash the rice.

        In another bowl, combine the diced tuna, mayonnaise, and Sriracha, mixing until the tuna is well-coated. Adjust the spiciness according to your preference.

          Heat sesame oil in a non-stick frying pan over medium heat. Take a handful of sushi rice and form it into small, compact rectangles (about 2 inches long).

            Dredge each rectangle gently in panko breadcrumbs for a crunchy layer.

              Place the rice rectangles in the pan and pan-fry for 3-4 minutes on each side or until golden brown and crispy. Remove from the pan and drain on paper towels.

                Top each crispy rice piece with a dollop of the spicy tuna mixture and a slice of avocado.

                  Garnish with sliced green onions and a drizzle of soy sauce.

                    Serve immediately with wasabi and pickled ginger on the side, if desired.
