10 small strawberries (or other fruits like grapes or hawthorn berries)

1 cup granulated sugar

1/2 cup water

1 tablespoon lemon juice

Wooden skewers or toothpicks

Sugar for dusting (optional)

Prepare the Fruit: Wash and dry the strawberries thoroughly. If using other fruits, ensure they are also clean and dry. Thread each fruit onto a wooden skewer or toothpick, leaving some space at the bottom for easy handling.

    Make the Sugar Syrup: In a medium saucepan, combine the granulated sugar, water, and lemon juice. Stir the mixture over medium heat until the sugar completely dissolves. Do not stir once boiling.

      Cook the Syrup: Bring the syrup to a boil and let it bubble without stirring until it reaches the hard crack stage, between 300°F (150°C) and 310°F (155°C). This should take around 10-15 minutes. Use a candy thermometer for accuracy.

        Coat the Fruit: Once the syrup reaches the desired temperature, carefully dip each skewer of fruit into the syrup, making sure it is fully coated. Allow the excess syrup to drip off.

          Cool the Candied Fruit: Place the coated fruit onto a sheet of parchment paper or a silicone baking mat. Allow the tanghulu to cool completely for about 10-15 minutes, until the syrup hardens.

            Optional Dusting: For an extra touch of sweetness, lightly dust the hardened tanghulu with granulated sugar before serving.

              Serve and Enjoy: Tanghulu can be enjoyed as a delicious treat! Simply pick each fruit off the skewer and savor the sweet crunch.
